Commercial Description

First up we decided to utilize a natural processed Pacas from Federico's newest farm, El Corozo. We paired the fruity, berry notes of this coffee with a honey processed Caturra from San Jeronimo Miramar in Guatemala. We see a lot of Catuai coming from FSJM, but in this case, we're roasting up one of its parent genetics - Caturra, which is a natural mutation of Bourbon. The Bressani Family dry pulps these cherries, using minimal water, to keep as much of the mucilage and pulp on the seed (bean) which will lead to a higher level of fermentation, and more perceived acidity in the cup. Together these two coffees produce a blend with a bit of funk!
