Description
We teamed up with our friends at The Veil Brewing Co. to brew our first Wild Ale together. Primary open fermentation in our coolship with a classic saison strain and a long secondary fermentation in stainless with both brettanomyces claussenii and our native New England mixed culture.
Stroka pours an enticing deep cherry hue with a foamy violet head. Vibrant aromas of wildflowers meet the nose alongside a bold note of strawberry with a hints of raw honey and earthy funk. A berry forward palate calls to mind flavors of freshly picked dark cherries and raspberries, with subtle cranberry leading into a delicate, vinous red wine grape profile. Lightly floral with the suggestion of hibiscus and rose hip, Stroka has a gentle level of acidity with a light body and clean finish. 6.9% ABV
