Saison brewed with Aged Hops, Raw Spelt, and Brettanomyces. 5.4% ABV

A spandrel is a byproduct of evolution. Something that quietly arises out of some other need but is warmly welcomed when noticed. Our Spandrel is that same base beer that becomes Levain but fermented entirely in stainless steel with our house saison yeast and brettanomyces. It is brewed with aged hops, unmalted spelt from Janie’s Mill and brettanomyces bruxellensis. Notice notes of overripe peach, fresh cut grass, honeydew, orchids, freshly mixed bread dough, guava and lovingly restrained funk.
